The one with the cottage style buns...

So last week I made lasagna and I had bought a huge tub of cottage cheese since their were no small tubs thanks to quarantine. So I have been overloading on cottage cheese with fruit, on salad but last night I was like I need to find other options before it goes bad. Within a few minutes I had a recipe that I wanted to try.

Welcome to cottage style buns, all of these items were already in my fridge and pantry, the type of recipe that I like to make.


All you need::

-1 and 1/2 cup cottage cheese

- 5 eggs

-1/2 tbsp vanilla extract

-1/2 cup sugar

-1/2 tbsp baking powder

-1 tsp baking soda

-1/2 tbsp white vinegar

-4 cups all purpose flour

-1/4 cup additional sugar


Directions::

-Preheat oven to 350 degrees

-In a food processor or blender add: cottage cheese, 4 eggs, vanilla and sugar. Blend till smooth

-Combine baking soda and vinegar in a bowl and add to the mixture

-If using a food processor add baking powder and flour and pulse until blended/ If using a blender add the mixture into a bowl with the baking powder and flour and mix until combined

-The dough is ready when combined and no more flour is seen (dough will be sticky)

-Dust your working surface with flour

-Place dough onto the floured surface and form into a square shape with your hands

-Cut dough into 24 equal portions

-Roll each portion of dough in your hands to form a smooth ball

-Place buns on greased baking sheet an inch a part from each other

-In a small bowl whisk remaining egg and bush each bun with the egg

-Top each bun with a sprinkle of the additional sugar

-Bake for 20 minutes

-Remove buns from oven and let cool

-Serve as is or with a little butter and jam


These are the buns that we made at home, I can't wait to eat these in the morning for sahur with some jam and cha.
