This has to be my favorite salsa to make, really fresh and light. Kind of reminds me of the corn salsa at Chipotle. Really easy to make and keeps well. Goes great with tacos, burritos, with chips or even as a side.

All you need is:
15 ounces corn (frozen or canned)
12 ounces black beans (washed and drained)
1/2 cup finely chopped (yellow, white or purple)
2 jalapeño peppers chopped (remove seeds if you don’t want too much heat)
1/4 cup fresh cilantro finely chopped
2 tablespoon fresh lemon juice
1 teaspoon garlic powder
1/2 teaspoon black pepper
Salt (to taste)
Directions:
Just mix all ingredients together, salt to taste. Let sit for about 5 minutes in fridges prior to serving.
