So it was about 8 pm last night and I needed a break from writing so I was like hmmmm...night bakes it is!
All you need is:
Cake:
2 cups all purpose flour
1 1/2 tsp salt
1 stick unsalted butter (softened)
1 cup sugar
2 large eggs
2 tsp vanilla extract
1/2 cup milk
1 tbs lemon zest
2 cups blueberries (frozen)
Crumble:
1/2 cup sugar
1/4 cup all purpose flour
3 tbs butter (melted)
Icing:
1 cup powdered sugar
2 tbs lemon juice
The directions are so easy:
Preheat oven to 350 degrees
Spray your pan and set to side
Prep crumb topping by mixing ingredients and setting aside
Sift your dry ingredients and set aside
In a large bowl beat butter and sugar until light and fluffy
Add in eggs and mix until combined
Mix in milk and vanilla
Mix in the dry ingredients little by little
Fold in the lemon zest and blueberries
Spread batter evenly into prepared pan
Sprinkle the crumb topping on top of the batter
Bake for about 45 minutes or until a toothpick can be inserted into the middle and be removed when clean
Cool for 10 minutes
Mix icing and drizzle over cake
Cake is great served hot, warm or cool
Took my cake to work and it was a huge hit!
