The one where I make Nimkis for the first time...

This has to be my favorite savory snack to eat after eid, I use to call them indian chips when I was younger.

All you need is:

1 cup flour

1/2 cup cold water

4 red chilies

5 cloves of garlic

1 1/2 tbsp carmon seeds

1 1/2 tbsp cumin seeds

1/2 tsp tumeric

1 tbsp salt

2 tap ghee or oil

Oil for frying


Directions:

Heat oil over medium heat

Grind chilies and garlic into a paste

In a large bowl mix all dry ingredients

Mix in the chili and garlic paste into the dry ingredients

With hand slowly add water and work until a stiff but soft dough forms

Coat hands with ghee or oil and form a smooth ball

Cut dough into 4 parts

Form a ball from each part and roll out toll thin (if dough is sticking to your board add a little bit of flour)

Take a knife or pizza cutter and cut into desired shapes

Add to oil and fry till a light golden color (make sure to not crowd pan to insure proper cooking)

Remove from oil and place on a napkin to remove any oil

Repeat until all dough is rolled, cut and fried

And there you have your nimkis

Wait till cool to serve

Be sure to place all left over nimkis in an air tight container to insure they stay fresh and crunchy.
