Ingredients:
5 cups of powdered milk
1/2 tsp of cardamon powder
1/4 tsp nutmeg powder
1 level tbsp of melted ghee
4 cups of sugar
3 cups water
Method:
In a bowl mix together powdered milk, ground cardamon, grated nutmeg and ghee with your fingers and rub well
Rub the mixture thru a sieve to remove lumps
Mix water and sugar in a pot and boil till syrup is sticky (The best way to see if the syrup is ready is to pour few drops in cold water. If it sets straight away then your syrup is ready.)
Pour the syrup in the powdered milk mixture and mix well all over
Quickly spread the hot mixture onto a ghee rubbed tray (You have to work very fast)
Spread very flat and top with your choice of sprinkles
Cut into squares (while soft)
Let it cool down completely (for about 1 hour)
Barfi is done!
